BEST BASIC SUGAR COOKIES
3/4 cup softened butter (at room temperature)
1 cup white sugar
(OPTIONAL: use brown sugar instead of white sugar!)
2 large eggs
1 teaspoon pure vanilla extract
2-1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder (optional)
With a standing or hand-held mixer, combine butter and sugar together until smooth. Beat in both eggs and extract. Mix in the flour, salt, and baking powder (I almost always omit baking powder to avoid the cookies from spreading!). Wrap the dough in plastic and chill for an hour or two.
Preheat oven to 365 degrees F. On a floured surface, roll your dough to 1/4 - 1/2 inch thick.
Use your favourite cookie cutters to cut out shapes. Place cookies 1 inch apart on ungreased cookie sheets. Bake 6 to 8 minutes, depending on the size of the cookies.
