CHOCOLATE COOKIES - PERFECT FOR ROLLING!
3/4 cup softened butter (at room temperature)
1 1/4 cups white sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/4 teaspoons baking powder (optional)
1/8 teaspoon salt
Mix butter and sugar together until smooth. Beat in the egg and extract.In a separate bowl, sift together the flour, cocoa powder, and baking powder (I almost always omit baking powder to avoid the cookies from spreading!). Combine the dry ingredients with the wet ingredients. Wrap the dough in plastic and refrigerate for at least one hour.
Preheat oven to 350 degrees F. On a floured surface, roll your dough to 1/4 - 1/2 inch thick.
Use your favourite cookie cutters to cut out shapes. Place cookies 1 inch apart on ungreased cookie sheets. Bake 8-10 minutes, depending on the size of the cookies.
