THE PERFECT GINGERBREAD COOKIES
6 tablespoons softened butter (room temperature)
3/4 cup brown sugar
1 large egg
1/2 cup molasses
2 teaspoons vanilla
3 cups all-purpose flour
1/2 tsp salt
1 tablespoon ground ginger
3 teaspoons ground cinnamon
1/4 teaspoon ground cloves
With a standing or handheld mixer, combine the butter and brown sugar together until smooth. Beat in the egg, extract, and molasses. In a separate bowl, sift together the flour, salt, ginger, cinnamon, and cloves. Slowly add the dry ingredients to the wet ingredients, until just combined. If it's too dry, add a splash of milk, but you don't want it to become to wet and sticky!
Preheat oven to 350 degrees F. On a floured surface, roll your dough to 1/4 - 1/2 inch thick.
Use your favourite cookie cutters to cut out shapes. Place cookies 1 inch apart on ungreased cookie sheets. Bake 8-10 minutes, depending on the size of the cookies.
