MARZIPAN - AN ALTERNATIVE TO FONDANT

What you will need:

  • 1.75 cups finely-ground blanched almond meal/flour
  • 1.5 cups icing sugar
  • 2 tsp meringue powder
  • 2 tbsp warm water
  • Optional: 1 tsp vanilla extract + 2 tsp almond extract + 1 tsp rose water
  • OR Optional: Candy Flavourings
  • Optional: Food Colouring

Combine almond flour, icing sugar, meringue powder, and water in a bowl. Add your extracts or flavouring. Mix with a dough-hook or pulse in a food processor, until it forms a firm ball. Divide your marzipan and add food colouring by kneading it into the dough.

Roll your marzipan dough to the desired thickness, and cut your shapes! Apply to your cookies or cakes!

Wrap tightly in plastic and store in a dark, cool place (do not leave in direct sunlight). Marzipan can also be kept in the fridge or freezer to prolong the freshness if you don't plan on using it up quickly! It can be shaped, coloured, and will also harden similarly to fondant. It's also DELICIOUS to eat on it's own or made into chocolate-coated candies!
