Roll out your dough, and use the scalloped edge of your circle cutter to make the cookie for the flower.
For the leaves, use the circle cutter to cut one plain circle shape.
Cut another circle in your dough, approximately at the centre of your first circle.
Do the same for the other side of your circle. Now you have two leaves!
Transfer your cookie dough to a baking sheet and press the lollipop stick into the top of the dough.
Place one leaf under the lollipop stick and one leaf overtop. Gently shape the top leaf around the stick and partially into the leaf below.
If your lollipop stick does not adhere to the cookie and comes off after baking, don't worry! The royal icing will completely secure the stick to the cookie.
With your chocolate royal icing or melted chocolate in a piping bag, pipe the centre of your sunflower.
Add your sprinkles to the centre, and use your leaf tip and yellow royal icing to pipe the outer ring of sunflower petals.
Add the inner ring of sunflower petals, and use your leaf tip and green royal icing to pipe on the sunflower's leaves.
Optional: You can also add lustre dusts, sparkle, or bits of gold to your sunflower for extra impact!
